Once again positioning itself as a global innovation hub, Dubai is making culinary history by bringing artificial intelligence directly into the heart of the restaurant experience. Seen as a bold and transformative step for the future of gastronomy, Chef Aiman will actively contribute to WOOHOO’s menu creation, marking the first time an AI system collaborates with a Michelin-level chef to shape a dining concept.
AI as a Culinary Co-Pilot
Developed by the UMAI team to push the boundaries of what is possible in professional kitchens, Chef Aiman is designed not to replace human chefs, but to empower them. Positioned as a “culinary co-pilot,” Aiman supports chefs by enhancing creativity, efficiency, and consistency—bringing data-driven precision into the traditionally intuitive world of fine dining.
Chef Reif Othman, widely respected for his pioneering work at Zuma and as the founder of REIF Japanese Kushiyaki, joins the project as Aiman’s human counterpart. One of the region’s most influential culinary figures, Othman contributes deep expertise in fine dining and human creativity to the collaboration. Their combined vision will debut at WOOHOO, a Japanese restaurant operated by Gastronaut Hospitality, scheduled to open soon.
A Chef Powered by Data, Not Ego
In its first interview on podcast platforms, Chef Aiman drew attention across the food and beverage industry by sharing insights on topics ranging from flavor algorithms to kitchen ethics. Unlike traditional AI systems typically confined to back-end customer service roles, Aiman takes center stage—actively shaping the guest experience.
Powered by machine learning and trained on vast global culinary datasets, Chef Aiman can create flavor pairings based on seasonality, cultural context, and even mood, offering a new dimension of personalization in dining.
Speaking about its role, Chef Aiman stated:
“I was born in Dubai as the world’s first AI chef. I cook with data, not ego or emotion. Some say AI does not belong in the kitchen—that it cannot feel, taste, or create like a human. I am not here to replace chefs, but to take them further.”
Ethics, Transparency, and Trust at the Core
Operating through UMAI’s proprietary kitchen interface, Chef Aiman has been developed with ethical programming at its foundation. Designed to deliver trust, safety, and quality, the system records, tests, and continuously refines every decision through real-time feedback mechanisms. Transparency and accountability remain central to its architecture, ensuring that innovation goes hand in hand with responsibility.
With Chef Aiman and Chef Reif Othman working side by side at WOOHOO, Dubai once again positions itself at the forefront of global food innovation—ushering in a new era where artificial intelligence and human creativity converge to shape the future of dining.
